Jiffy Peanut Clusters
1 6 oz. pkg. chocolate
1 cup shelled, roasted Valencia Peanuts
Melt chocolate pieces in a double boiler and stir in peanuts. When mixed together well, drop by spoonfuls onto waxed paper.

 

Peanut Patties
1 ½ cup sugar
2/3 cup milk
2 ½ cup raw shelled Valencia Peanuts
4 tsp. butter
1 cup powdered sugar
few drops red food coloring (if desired)

Pour first 4 ingredients in a large pan and cook slowly until it forms a soft ball when dropped in cold water. Take off fire and add butter, powdered sugar and red food coloring. Stir until it begins to thicken. Drop by Big spoonfuls on waxed paper.
Be sure to leave plenty of room for them to spread.

 

Micro-Peanut Brittle
1 cup raw Valencia peanuts
1 cup granulated sugar
½ cup corn syrup
1/8 tsp. salt
1 tsp. butter or margarine
1 tsp. soda
1 tsp. vanilla
Stir together nuts, sugar, syrup and salt in a three quart bowl. Place in microwave oven and cook 7 to 8 minutes, stirring well after four minutes. Add butter and blend well. 
Return to oven and cook 2 to 3 minutes or until nuts are golden brown. Add Soda and vanilla and gently stir until light and foamy. Pour onto greased cookie sheet and let cool. 
When cool break into pieces and store in airtight container.

 

Peanut Brittle
2 cups sugar
1 cup white Karo 
½ cup cold water 
2 cups raw Valencia Peanuts
1 tsp. butter
1 tsp. vanilla
1 tsp. soda
Boil sugar, karo and water until it forms a thread. Then add butter and nuts. Then boil until a golden brown and nuts begin to pop. Remove from fire and add vanilla and soda.
Stir well, and then pour out as thin as you can on a lightly greased baking sheet. When cooled break into pieces and store in air-tight container.

 

Portales Party Peanuts
6 oz. butterscotch morsels
2 tsp. peanut butter
3 cups Valencia Roasted shelled peanuts
Melt morsels over low heat (or in a double boiler) add peanut butter. Stir with wooden spoon until smooth. Add nuts, drop by spoonful onto foil. Let cool – store in airtight container.
